Chilled avocado goddess soup

Method

    Scoop the avocado into a blender with cucumber, yoghurt, cold stock, lime, herbs and garlic.

    Blend on high for 60 seconds until completely smooth. Add extra stock if you want a drinkable consistency.

    Taste and season generously with salt.

    Chill for 20 minutes if you have time โ€” it deepens the flavour.

    Pour into bowls (or mugs) and finish with a swirl of olive oil, chilli oil and torn basil.
